1 large Granny Smith apple
2 carrots
1 medium beetroot
Juice of 1 lime
2 tablespoons cold-pressed olive oil
Pinch sea salt
Freshly ground black pepper
1 teaspoon honey (or 1/4 teaspoon Nature Sweet Sugar Substitute)
1 red leaf lettuce
1 butter lettuce
(GF, DF, NF, V)
Grate the apple, carrots and beetroot.
Place the lime juice, oil, salt, pepper and sweetener into a screw-top jar and shake. Arrange washed and dried lettuce leaves on plates.
Place some of the grated mixture into the centre of each leaf.
Spoon the dressing over the top.
